The harvest is manual and is collected in boxes of 20 kg, which are unloaded in a selection table to ensure that all the grapes reach the entire deposit and completely healthy. All stainless steel tanks have temperature control, cooling system and heating. The capacities of the tanks are from 1,400 liters to 3,000 liters and the grapes from each of the vines are vinified independently in different tanks. Each vineyard requires a custom-made winemaking and variety.
